Tried this recipe and thought it was wonderful. It can be used as a hot salad or a side dish.

| 1 | Stick | Butter (approx.) |
| 2 | Bunches | Green onions, chopped |
| 1 | Pkg. (small) | Fresh mushrooms, sliced |
| 1 | Jar (small) | Artichoke hearts |
| Marinated and chopped | ||
| 1 | Can (small) | Sliced black olives |
| Lemon pepper to taste |
Cook rice according to directions. Saute green onions in butter (about 1 tsp.); sprinkle with lemon pepper; remove from pan and set aside. Saute mushrooms in butter (1-2 tsp.); sprinkle with lemon pepper. Add cooked rice and green onions to mushrooms and add 1/2 stick of butter. Sprinkle with lemon pepper; stir-fry until heated. Add artichoke hearts (undrained) and black olives. Stir gently til heated. Serve warm or cold.
