Spinach Souffle

This recipe comes from Fryemont Inn B&B, Bryson City, NC It doesn't get any easier or any better. Try it...I guarantee that you will like it.
| 2 | pkgs | frozen spinach, chopped |
| 4 | large | eggs, beaten until fluffy |
| 1 | can | mushroom soup, undiluted |
| 1 | small | onion, finely chopped |
| 1 | cup | sour cream |
| 1 | clove | garlice, finely chopped |
| 3/4 | cup | Swiss cheese, grated |
| | | salt and pepper to taste |

- Directions:
- Heat oven to 325 degrees.
- Thaw frozen spinach and drain well. Combine with all ingredients except the cheese and mix well.
- Put in greased casserole and top with the grated cheese.
- Bake for one hour at 325 degrees.
- Serve hot. Serves 6 - 8
