Mexican Red Beans

My crew loves any food that is Mexican so they can hardly wait for this to be ready.

1 lb. dry beans, soaked overnight
4 c. cold water
1 lg. onion, chopped
1 can tomatoes (16 oz.)
2 cloves garlic, minced

2 tsp. chili powder
2 tsp. salt
2 tsp. ground cumin
1/4 lb. salt pork or bacon, chopped (optional)

Put all ingredients in Crockery Pot. cook on high for about 2 hours, then turn to low and cook for 8 hours.

These beans can be partially mashed and used as a low-fat alternative to refried beans.
