Beef-Barley Stew

1 lb. extra-lean ground beef
1/2 c. chopped onion (about 1 medium)
2 c. beef broth
2/3 c. uncooked barley
2 tsp. chopped fresh oregano (1/2 tsp. if using dried)
1/4 tsp. salt

1/4 tsp. pepper
1 can whole tomatoes, undrained (16 oz.)
1 can sliced water chestnuts, undrained (8 oz.)
1 pkg. frozen mixed vegetables (10 oz.)

Cook ground beef and onion in skillet over medium heat, stirring occasionally, until beef is brown; drain. Mix beef mixture and remaining ingredients, except frozen mixed vegetables, and place in Crockery Pot; break up tomatoes or use diced tomatoes. Cover and cook on low 2 hours. Stir in mixed vegetables. Cover and cook on low 3 more hours or until barley is done.
