Soften yeast in 1/2 cup of warm water. Combine boiling water, 1 cup oats, molasses, shortening and salt. Cool to luke warm. Stir in 2 cups flour and beat well. Add yeast and eggs, beat well. Stir in enough more flour to make a soft dough. Knead for about 8 minutes. Shape into a ball and let rise 1 1/2 hours. Punch down and divide into half and let rest 10 minutes. Put into 2 greased pans on which 2 tablespoons of oatmeal has been sprinkled. Cover and let rise 45-60 minutes. Brush tops with beaten egg white and water and sprinkle additional oats on top. Bake at 375° for forty minutes. Cover with foil the last 15 minutes of cooking time.
