| 1 | small can | Artichoke hearts, drained and chopped |

| 1/2 | C | Sharp cheddar cheese |
| 2 | tbsp | Fresh minced parsley |
| 1/4 | tsp | Dried oregano |
| 1/2 | tsp | Salt |
| Pepper to season |
Heat oil in skillet and sauté onion until soft. Careful not to scorch. Beat eggs in a bowl, add the chopped artichoke hearts. Stir in the other ingredients. Pour into a baking dish and bake 25-30 minutes at 325 degrees. Cut into small squares or triangles and serve warm.
